    Prepare the necessary ingredients for the recipe with vegetables.

    I recommend choosing a good quality cereal. The barley should be whole, without visible damage, cracks or dark spots. Croats should be even and homogeneous in size. There are several types of pearl barley, for example, solid and crushed. For porridge, it is best to choose a solid cereal, as it retains more nutrients.

    What vegetables to choose, a matter of taste of everyone. Onions and carrots are obligatory ingredients. The rest of the vegetables in the recipe can be changed or supplemented with your favorite vegetables. For example, you can take patch beans, green peas, corn, zucchini, tomatoes, pumpkin, broccoli, colored cabbage or others. Vegetables are suitable both fresh and frozen.

  • Step 2

    Rinse the cereal under cold water to remove dust and excess starch.

    Perlip can be soaked in cold water for 6-8 hours or at night. This is not necessary, but this method accelerates the cooking process. I recommend filling the washed cereal with boiling water for at least an hour so that the cereal swells well.

  • Step 3

    Pick up dishes for cooking barley. It is best to cook pearl barley in a pot with a thick bottom to avoid burning and ensure uniform warming of cereals.

    To prepare pearl barley porridge, take water in a ratio of 1: 2 (one part of the barley, two parts of water). Bring to a boil, reduce fire and cook over low heat for about 60-80 minutes. Periodically, you need to check the process, whether the water has boiled, and add a little, if necessary.

  • Step 4

    When the pearl barley is almost prepared, you can leave the porridge on the stove for 10-15 minutes, covering it with a lid so that it «reaches» and becomes softer.

  • Step 5

    Clean the onion. Dry with a napkin. Cut into small pieces. Take a deep pan. Warm up oil in it. Add chopped onions. Fry on low heat for 2-3 minutes so that the onion becomes softer.

  • Step 6

    Cut the prepared carrots with thin cubes. Add to onions. Cook on low heat for 4-5 minutes. During this time, carrots will become a little softer.

  • Step 7

    Sweet pepper I used frozen bars chopped. I just took out in advance from the freezer and defrost. Fresh, any variety and color is perfect. Add sweet pepper to vegetables. Fry for another 4-5 minutes over low heat, stirring.

  • Step 8

    Rinse and dry celery stalks. Cut into small pieces. Add to the pan. Mix.

  • Step 9

    Cover with a lid and put out for 3-5 minutes so that the vegetables become softer, but do not lose a crispy note.

  • Step 10

    Add boiled pearl barley porridge to vegetables. If necessary, season with salt and ground black pepper. Mix. Stew the barley with vegetables under the lid for another 4-5 minutes over low heat so that all the ingredients are saturated with the aroma of each other.

  • Step 11

    You can immediately serve to the table, independently or with a vegetable salad.

    The barley is perfectly stored in the refrigerator for up to three days in a tightly closing container. You can send to the freezer after cooling. Shelf life of no more than two months. I recommend freezing portions, which is very convenient for defrosting. When heating barley with vegetables, add a little water or oil to restore freshness to the dish and prevent it from becoming too dry.
