Fried squid in a pan

Preparation: Step 1

  • Prepare all products for cooking fried squid.

    If the squids are frozen, they need to defrost them gradually — it is best in the refrigerator, leaving for 4-5 hours.

    If there is no time, transfer to a bowl with cold (not hot!) Water and wait 30-40 minutes.

    Do not defrost in hot water or microwave. This sharply changes the structure of meat, seafood will become “rubber” even before frying. It is better to spend a little time on natural defrosting.

    If you take unpeeled squid, you need to lay a little more by weight. After cleaning, their weight will become less.

    The carcass should be light gray, not yellow-this indicates the correct freezing.

  • Step 2

    Rinse squid under cold water. Remove the insides and the transparent «stick» (chord) inside.

    Remove the thin film from the outside — it easily goes away if it is placed in your fingers or knife.

    Rinse again both outside and inside to remove possible grains of sand.

  • Step 3

    Cut with rings, stripes or even pieces — as you like more. The thickness of the cut is about 1 cm.

  • Step 4

    Clean the garlic. Cut it into small pieces or pass it through the press.

  • Step 5

    Prepare a pan for fried squid. Pour oil into it and warm up well over medium heat.

    Add garlic to the oil and fry 30 seconds to make the aroma. Do not allow darkening.

  • Step 6

    Put the chopped squids in the pan. Prepare 2-4 minutes over medium heat, stirring periodically. Add salt, black pepper or spices to taste. If desired, sprinkle with lemon juice.

    Salt pulls moisture, so you need to add it at the end of the frying so that the squid remains juicy.

    As soon as the squids twisted and began to be soft — remove from the fire. Do not overexpose, so as not to become rubber.

  • Step 7

    From the remnants of squid, you can make a quick snack — just mix with a boiled egg, a spoonful of mayonnaise and a fresh cucumber.
