Prepare all the necessary ingredients for the preparation of stewed potatoes with beef in a pan. You can take any part of the beef, but for this I prefer to take a brisket with bones so that, while languishing potatoes, it boils in beef, strong broth.

Rinse the beef under cold water. Dry with paper towels so that the meat is well fried and does not «cook» in a pan.

Peel the meat from excess veins.

Cut the beef into medium pieces of 2-4 cm in size. Large pieces are stewed longer, and small pieces can dry out, so try to observe the optimal size.

Clean the onion. Cut into small cubes or thin half rings (as you are more convenient).

Prepare a pan with a thick bottom for extinguishing potatoes with beef. The thick bottom allows the products to be evenly prepared and not to burn. Heat 2 tbsp. l. vegetable oil.
Fry the onion for 3-4 minutes until soft and transparency. Stir constantly so that he does not burn.

Grate the carrots on a coarse grater or cut into thin circles so that it softens evenly during stew.

Add carrots to onions.

Fry 5 minutes until the carrot begins to soften and give its sweet aroma to the dish.

Put the pieces of beef. Fry over medium heat for 7-10 minutes. The pieces should become ruddy and slightly covered with a crust — it seals juices inside the meat and makes it more tender after stewing.

Add tomato juice to meat with vegetables. Mix.

Peel and rinse the potatoes. Cut in large pieces about 2-4 cm. If you cut too finely, the potato will turn into mashed potatoes during stew.

Add chopped potatoes. Mix.

Pour in water or broth so that it almost covers the potatoes. Add bay leaf, salt and pepper to taste.
Cover the pan with a lid. Stew potatoes with beef over low heat for about 40-50 minutes. Make sure that the liquid does not boil — if necessary, add more water or broth. Potatoes should become soft, and beef should be tender.

Clean the garlic. Finely chop or squeeze through the press.

Add garlic 5 minutes before the end of cooking so that it can open the aroma, but does not lose taste. Try the dish and, if necessary, add more salt or spices.

The stewed potatoes with beef are ready.
Remove from heat and let the dish brew under the lid for 10-15 minutes so that the tastes mix and become even more saturated. Then put in a plate and decorate with herbs.
