Preparation: Step 1

  • Step 3

    Just like eggplant, cut the zucchini.

    I have it quite young. The skin and seeds are soft, so it was not necessary to remove anything. In any other case, the zucchini will need to be cleaned of seeds and skin.

  • Step 4

    Peel and grind the garlic with the help of the press.

    Eggplant is very fond of garlic. Therefore, I take at least two large cloves.

  • Step 5

    The eggplant is well wetted with paper towels to remove the liquid.

  • Step 6

    Prepare a convenient pan for zucchini with eggplant.

    Heat well and add a couple of tablespoons of olive oil. Throw the eggplant and quickly fry them a little on high heat.

  • Step 7

    Add zucchini. Salt everything, pepper and add a couple of a pinch of sugar.

  • Step 8

    Fry over high heat all together for a couple of minutes.

    After add soy sauce, chopped garlic, mix again and decrease the fire after half a minute. Close with a lid and freeze zucchini with eggplant for another 3-4 minutes.

    I love when the eggplants are completely ready, (which is why I fry them first), and the zucchini still remains crispy.
