Rinse broccoli under a stream of water and separate from the stem of inflorescence.
If it is home cabbage, then I would use the stem. To do this, remove the upper rough layer, for example, using a vegetable engine, and then cut the stem in small pieces and add cabbage to inflorescences.

In boiling, salted water, throw broccoli inflorescences and boil for two to three minutes.
Do not forget that we will subject it to repeated heat treatment — frying, so this time is enough for the cabbage to become a little softer, and we do not need more.
Another moment. If I take frozen broccoli, then after defrosting I don’t cook it anymore (it is already soft enough), but I just grind it and straight a pan. In this case, I fry it for a minute or two longer.

Grate the cheese.
This does not have to be semi -hard cheese. You can take both hard and some remnants of different cheeses.

Prepare additional ingredients. Clean the garlic and finely chop, remove the leaflets of the Chebrez from the tok stems, and cut the desired amount of chili pepper with thin rings. If you want the dish to be sharper, do not remove the seeds at the chili pepper. And vice versa, for light pinworms — the seeds are removed.

Drain the water from broccoli and place cabbage in a bowl with very cold water. To do this, I throw ice cubes into the water. All these manipulations are done in order to maintain a beautiful green color at broccoli inflorescences.

Broacls the inflorescences of the broccoli on a sieve, and then cut into small pieces.

Heat the pan, add butter and olive oil, chopped garlic and rings of chili pepper. Fry a minute over medium heat.

Drive eggs into a bowl and mix them with 2 \ 3 of the total amount of cheese. The remaining cheese I always sprinkle the dish at the end, but this is not necessary. You can stir all the cheese at once. Salt a little.

Add crushed broccoli inflorescences to the pan. Fry a minute to evaporate excess moisture.

Pour in a mixed egg with cheese and stir well. Fry all together another — two minutes.

Sprinkle with thyme and the remaining cheese from above. Close with a lid and hold broccoli with eggs and cheese in a pan until the cheese is held for another minute.

Everything, broccoli in a pan with an egg and cheese is ready.
It is undesirable to freeze this dish, since there is molten cheese in it, which well, does not like any frost at all.
