Prepare all ingredients for eggplant caviar with tomatoes and pepper.
The number of ingredients is designed for two portions.
All vegetables for the recipe are used fresh. But you can cook such caviar from frozen eggplant and peppers. Caviar will turn out no less tasty and fragrant.
I cut vegetables for caviar very finely. In my opinion, eggplant caviar turns out as delicate as possible and at the same time very tasty. But you can cut vegetables as you like best, relying on your taste.

Prepare an onion for eggplant caviar.
Peel the onion and rinse. Finely chop the onion.

Clean the garlic from the husk. Rinse the cloves of garlic well and cut them into small cubes.

Prepare eggplant.
Peel the eggplant from the peel. You can, of course, use eggplant with the peel, but without it the caviar is much more tender in taste.
Cut the peeled eggplant into small identical cubes. For a very long time I have not come across bitter eggplants, so I first can’t stand them in salt. If you still got eggplant with bitterness, then they must be cleaned from the peel, cut into circles and salt salt. Leave the eggplant in this form for 15 minutes. After that, rinse the eggplants well under running water and dry.

Prepare bell pepper for eggplant caviar in a pan for dinner.
For the recipe, I chose the red pepper. It not only looks beautiful in the finished dish, but also has a dense sweet pulp.
Clean sweet bell pepper from seeds. Cut into small identical cubes.

Pour vegetable oil into the pan. Add chopped onions and garlic to it. Fry vegetables over moderate heat for about 3 minutes with periodic stirring.
To make eggplant caviar, you can use any vegetable oil. I like to cook in mustard oil. Dishes with it are bright and pleasant to taste. You can use sunflower or olive oil. Choose what you have in stock.

Add chopped eggplant and sweet pepper to the pan. Fry vegetables with periodic stiring for about 5 minutes.

Prepare tomatoes for eggplant caviar.
Carefully cut the tomatoes and put them in a blender bowl.

Punch tomatoes with a blender. The mass should not turn into mashed potatoes. Let small pieces of tomatoes remain in it. So it will only be tastier.

Vegetables should already prepare from above, but still remain elastic inside.

Put the crushed tomatoes in the pan. Add salt, spices and sugar.

Mix everything well. Cook eggplant caviar in a pan for 10 minutes with periodic stiring.
