Preparation: Step 1

  • Prepare all the necessary ingredients for Gaspacho according to the classic recipe at home.

    The basis of the soup is tomatoes, everything else is an addition, so it is important not to overdo it with the rest of the vegetables. And, of course, buy ripe, fragrant, sweet tomatoes. If the tomato is fresh, but very soft or cracked, it is suitable for cold soup. The main thing is that there is a lot of pulp in tomato, and pink or red vegetables does not matter.

    The cucumber gives the freshness of the gaspacho, so you need to choose young, crispy and with small seeds of cucumbers. Large white seeds in the vegetable will affect the taste of the finished soup, in interrupted form they will come across and crunch on the teeth.

    Bread is needed to thicken the soup and give it the desired texture. Bread can be taken not the latest, a loaf bought 2-3 days ago, or Chiabatta, is good. But you can use fresh bread, it is not necessary to wait a few days from the date of baking.

    Vinegar will be complemented by a pleasant sourness of gaspacho, wine — a great option. If you have a sherry vinegar, use it, then the cold soup of the gaspacho will be even closer to the original.
    The onion adds piquancy and sultry in nature to the dish, add sweet red (Yalta onions) or salad, like an alternative.

    The severity will give the dish burning pepper, but it needs very little. The absence of fresh bitter pepper can be replaced with dry or Tabasco sauce.

  • Step 2

    Rinse all the vegetables well, clean the onion and garlic from the husk. Rinse the green basil thoroughly under running water, remove the hard part of the stem and, in the presence of wilted leaves.

  • Step 3

    Cut the bread with a small cube, remove the crusts. They can affect the Gaspachu texture, especially if your blender is not very powerful.

  • Step 4

    Red Yalta onions are very finely chopped so that the onion gives juice.

  • Step 5

    Mix cubes of bread and finely chopped onions, add 1 tbsp. l. wine vinegar and mix thoroughly. Thanks to this, the bow is marked with vinegar, and this marinade will absorb bread. Close the food film and put in the refrigerator.

  • Step 6

    Clean tomatoes from the peel, this is a very important stage, do not miss it. In a broken form, the peel will come across and spoil the taste of the finished dish.

    On tomatoes, it is necessary to make a cross -shaped incision, pour boiling water so that the water covers the tomatoes completely. Leave them in hot water for 1 minute, then pour cold water for another 1-2 minutes. After that, the skin is easily removed from tomatoes. Remove the hard part of the tomato.

  • Step 7

    Clean cucumbers from the peel with vegetables or a sharp knife. Remove the tails, check the cucumbers for bitterness. Clean bell pepper from the peel, I did it with a vegetable cleaning.

    For the preparation of gaspacho according to the classic recipe at home, sweet pepper can also be baked at 200 degrees in the oven for 8-12 minutes. The skin will begin to crack and blacken. After cool the peppers and remove the skin with your hands. Choose which option is more convenient for you. In the Bulgarian pepper, you need to remove the seeds and the stalk.

  • Step 8

    Cut all the vegetables into pieces in an arbitrary form, add the basil, garlic and a couple of pieces of spicy pepper. Literally a quarter of a teaspoon so as not to interrupt the taste of tomatoes. Prepare salt, olive oil and marinated onions with bread.

  • Step 9

    Kill all the ingredients to the state of creamy soup with a submersible or stationary blender. Try for salt, add a little if necessary. If you don’t have enough sourness, add a couple of drops of wine vinegar. Put a couple of ice cubes. Remove in the refrigerator until it cools down for 1 hour, you can more. The longer the cold soup of the Gaspacho will insist, the more interesting and saturated the taste will be.

  • Step 10

    Before serving, mix the soup. If it has become very thick, dilute with cold water or ice cubes. Garnish with a twig of basil, sprinkle with olive oil, with freshly chopped black pepper. Add crackers or bread sticks.
