Preparation: Step 1

Prepare the main ingredients for classic soup with meatballs.
I took a pork neck, which was ground to me with a store in the minced meat. In this case, I am absolutely sure of his quality.
I always add a little ground crackers to the minced meat for a more delicate consistency of meatballs. Without crackers, they will turn out to be more dense and firm. But crackers are not an obligatory ingredient. If you want pure meat, then just exclude them from the recipe.
The chicken egg is small, about 56-58 grams.
Greens are already crushed, freshly frozen.
From the seasoning I, except for ordinary salt and pepper, is still Swans Sol — a mixture of salt and spices, Georgian cuisine. It gives the dish an additional aroma. Approximate composition: garlic, coriander, acute paprika, caraway seeds, dill seeds, saffron, push- I love this seasoning very much, it approaches literally everything.

Clean on onions and divide in half. Finely chop the first half, it will go into a fry for a soup.

Place the second half of the bow in a blender, add 40 water grams and grind. This chopped bow will go to meat minced meatballs.
If you yourself twist the meat into minced meat, then you just need to twist the onion with it, and then pour the water into the minced meat when mixed.

Clean and grind carrots and garlic.
I always pass the garlic through the press, and the carrots are on a grater, in my opinion it is a little faster than cutting with a knife.

Place the minced meat in a bowl and add a crushed onion from a blender, ground crackers, garlic, salt, pepper and drive an egg to it.

Mix the minced meat well (for a couple of minutes) until it becomes smooth, and blindly from it small meatballs for soup. The size of the meatballs depends on your desire. I always slightly shake the minced meat in two palms at once, giving it a rounded, but not perfect shape. It turns out quickly, not very round, but this is no less tasty.

Peel the potatoes and cut into a cube.

Add oil and onion with carrots to a hot pan. Fry everything over medium heat until half -cooked.
Of course, olive oil can be replaced with any other species: Ghey, just creamy or vegetable.
By the way, before doing a roasting, you can already put a pot of water on the fire, let it heat up.

Add meatballs to boiling water and, after a second boiling, collect a spoon on top of the foam.

Next, add chopped potatoes, seasonings and onions and onion frying to the pots to meatballs. Let it boil, close the lid and cook all together over low heat for about 12-15 minutes, no more.

At the very end, add chopped greens, bay leaf, check for salt and pepper, bring to a boil again and turn off everything. Let stand under the lid for about ten minutes so that the soup calms down, and the aromas mixed.

Soup with meatballs according to the classic recipe is ready! If desired, you can serve with sour cream, it is good there.
